The ancestor of durum wheat, it is an ancient grain with a high protein content, cultivated as early as 6,000 years ago in Egypt. Very versatile in cooking, in spite of its exotic name, it comes from a 100% Italian, 100% organic supply chain.

One of the oldest and most resistant grains known to man. Able to adapt to difficult soils and temperatures, less susceptible to disease, better able to compete with weeds. Nutritionally, its strong points are magnesium, fibre, as well as iron and low fat.

The father of all wheat, it is the oldest cereal crop to be grown by man. Rich in antioxidants, carotenoids, vitamins and minerals, it has a low gluten content and contains highly soluble starch.
