  • EXPRESS
    COOKING

    • Bring the water to the boil and add salt (70 grams every 10 litres)
    • Add the pasta, whilst keeping the temperature constant
    • Cook according to the time on the package
    • Drain well and season with your choice of sauce
    • Serve straight away
  • PARCOOKING

    • Bring the water to the boil and add salt (70 grams every 10 litres)
    • Add the pasta, whilst keeping the temperature constant
    • Cook according to the parcooking time on the package
    • Drain well and reduce the temperature (with cold water/ice or in a blast chiller)
    • Place the pasta on a tray with a bit of oil and put it in the fridge
    • When you need to use it, cook the pasta again in boiling water for 1-2 minutes
    • Drain well and season with your choice of sauce
    • Serve straight away
  • COOKING FOR
    CANTEENS

    • Bring the water to the boil and add salt (70 grams every 10 litres)
    • Add the pasta, whilst keeping the temperature constant
    • Cook according to the parcooking time on the package
    • Drain well and place the pasta in the food warmer (or hotplate), where the cooking will be completed
    • Add your sauce of choice to serve it
    • Serve straight away
