If you are looking for the perfect idea for a romantic dinner, but also to amaze your guests, you are in the right place!
Try paccheri stuffed with ricotta cheese, shrimp and stracciatella, served with a smooth tomato and fresh cream sauce. Let’s check out the ingredients and then start preparing!
Ingredients (for 4 people)
200 g ricotta cheese
100 g stracciatella
500 g shrimp
extra virgin olive oil
salt and pepper
for the pink sauce
400 g tomato sauce
100 ml fresh cream
plus
extra virgin olive oil
marjoram as needed
toasted almond slivers as needed
Preparation
The stuffing
Clean the shrimp; remove the head, shell and devein them using a toothpick. Rinse and cook them in a pan with a drop of olive oil for about 5 minutes. Cool them and cut them coarsely into pieces. Place them in a bowl with the ricotta cheese and the stracciatella in pieces. Season with salt and pepper. Mix until smooth.
The sauce
In another small pot, place the fresh sauce and the fresh cream. Mix and heat up.
Our pasta
Cook the paccheri in plenty of salted water and drain when cooked, drain al dente. Stuff the paccheri with the previously prepared mixture of ricotta and shrimp using a piping bag. Place them in a casserole and drizzle with extra virgin olive oil. Heat them in the oven for 10 minutes.
Plating
Spread the pink sauce on a plate and place the paccheri on their ends in the centre of the plate. Around the paccheri create drops of cream that has leaked out from the stracciatella, using a small bottle to dose it. Once you have created the drops, use a toothpick to draw a circle. Lastly, decorate with toasted almond slivers and marjoram leaves, a drizzle of extra virgin olive oil and some ground pepper.
